Here's the recipe I promised:
1 cup all purpose white flower, 1 cup corn flower, 1/4 cup sugar, 3/4 cup raisins, 5 dried apricots chopped up, the peel of 1 orange, 1 teaspoon of cinnamon, a dash of nutmeg, 3 teaspoons of baking powder, a pinch of salt - mix well, then stir in 1/3 cup of oil (I use extravirgin olive oil, but you can use any oil you like), the juice of the orange, 1 cup of milk (or soy milk or oat drink, if you have issues with dairy products),1 egg (optional - if omitted, add a little more milk). Mix well and quickly pour into a greased and flowered cake dish. Bake for 25 minutes at 225 °C - Enjoy!

It is indeed the mix for a sort of cake, actually an enriched version of corn bread. The orange stuff is orange peel zinger! Sorry, no coconut (though I might try a version with coconut next time now that you gave me the idea).
