Mormon communities were historically based on farming--ranching wasn't a big deal, altho there must have been some later on. Maybe the width was so you could turn a big wagon and team around without unhitching. In any case, these very wide streets, along with the Cartesian street numbering grid ("100 W, 200 S"), are characteristic of a town platted by Mormon settlers.
