Why is there no yacht in the equilateral triangle?

Different boat and different POV, hence different background.

So the rule of triangles does not apply equally from all angles?

Yes, it does; there just didn't happen to be a yacht in that stretch of sea at that moment.

And (as I've said) it isn't a rule; it's an attempt at an explanation of why things do or don't look right to the eye.
