Mais Rostrato Rosso di Rovetta is a fine, native variety from the Bergamo area, grown at the foot of Mount Presolana. Characterized by reddish-orange kernels with a typical "rostro" (a conical beak-like tip), it is harvested by hand, dried, and stone-ground to produce a whole-grain flour for polenta.
