Good Food Week
This week has been a good food week. I love to cook, and I'm a foodie, and we always menu-plan, so I can plan food shopping and the budget. Recently, we've been having vegan/vegetarian meals 4 times a week, then meat meals or fish the other 3. It's cheaper this way, and besides, I don't want to eat meat/fish every single day; I get bored.

We've discovered something called Dopsu No Beef/Chicken/Pork and so on. It looks like cooked shredded meat, and is great in a stir fry. It costs less than £3 a bag, and the way we have it, it serves 4 so it's very cost effective. Tastes good too! Monday, we had No Pork in a BBQ sauce with rice, shredded carrot, watercress and pineapple. Oh my...

Tuesday was one of my favourites: beef caserole cooked in stout with carrots, mushrooms, and served with potatoes.

Wednesday was sweet and sour tofu. Delicious.

Thursday was turkey meatballs and pasta.

Friday we had 'fake' breaded chicken fillets with chips and salad. One of my favourite meals, even if it's fake chicken.

Saturday I made a meal using green lentils, kidney beans, and chopped walnuts, lots of herbs, some onion, mushrooms. You blitz it in a food processor. It made a kind of paste not unlike refried beans, that we had in wraps with shredded lettuce, and served with sweet potato wedges. Different, but nice, and very easy. Another cheap meal.

Sunday we pushed the boat out and had roast pork dinner with all the trimmings, followed by a sour cherry pana cota. Delicious! Both were heavily reduced, so not too expensive.

I like to experiment in the kitchen, and we're often checking the internet for different vegan dishes to keep things interesting. My son loves a tofu curry, or bean caserole. Often when he has these kinds of dishes I'll have fish of some kind; he doesn't eat fish, ever. Strange... lol

Work has been good. The odd screamer, but mostly not too bad. The one day I espied what was obviously Granddad pushing a trolley with a baby carrier in it, and I asked if I could have a peek. Such an adorable little girl! The store was noisy, music was playing, and she was fast asleep. We love the quiet ones.

I managed to work 4 hours overtime, but it was hard work getting the overtime as nobody seemed sure how many hours were available due to the usual supervisor being off sick. So far, I have almost 11 hours extra pay coming this month. It all helps keep the wolf from the door, and this wolf has very big teeth!

We'll be asking for recipes if the inflation / recession gets too serious.
I'm something of an omnivore, my IBS tends not to like too much of certain vegetables at any one time, it gets on far better with a mixture. Much as I enjoy salads in hot weather, I have to regulate the amount of lettuce, and raw onion is a no-no [although I can eat it cooked without problems].
The cost of meat or fish as the main protein component is something I have to watch when budgeting / planning meals. For a treat I quite like trout or salmon ...

Garden is doing OK - we had some rain recently and decent weather forecast for this week. So, I'll be out with the mower [again] ...

Work is being interesting and I have plenty of admin / tender submissions to keep me busy; as well as all the workshop visits ...

Oh, and we've managed both a decent holiday in Norwich and a few more "day trips" - especially since we had our spring "booster" jabs. Having just been out on the "b'day bash" with my friend, I'm now wondering what to suggest for mine [next month].

At least you are getting more work to help out with the bills. I suddenly found out that McAfee charged me £99.99 for an upgrade and renewal - the only thing is I didn't ask for it but PayPal has paid it out!!!! I tried to phone McAfee but no reply - I'll phone again tomorrow. I was in a state of panic when I found out this afternoon, but I'll sort it out (I hope) tomorrow.

Still I had a lovely day today because my son came up and took me to the beach!!!!

Sara - when the pandemic first hit, I got caught out as we had very little food stocks here due to very limited budget. It was my son who suggested more vegan meals as they can be made quite cheaply. We enjoyed them, a lot, and even though I now have more money due to my job, we've stuck to it. Now prices are rising so much, it's even more important that we watch our budget like a hawk.
Glad work is going well.
Good to see you've managed a holiday. I should be getting a further booster soon, along with the flu jab, due to my age.

Jenny - Oh, that sounds like an 'auto renewal'. I always cancel those. Hope you can get your money back. If you can't contact them by phone, then try and email them. They should have warned you it was coming out of your account, even on auto renewal.
Maybe start eating your way through the freezer? Even living alone, you should cook for yourself to keep healthy. Can your helper maybe lend a hand in this instance?
Oh nice, a trip out! Lovely. I haven't been to a beach in over four years now. Bit landlocked here.

Rick is not a veggie man at all so I can barely get him to eat a small side of vegetables never mind full meals. Broccoli and cavatelli (a type of pasta) is one exception as he loves it. Though occasionally I would enjoy a good Ratatouille.

Thanks Gracie. I never did like ratatouille I'm afraid. Veggies are a trial with my son, though he does eat some, and he eats loads of fruit. Won't touch a salad lol, whereas I love them. He does like a lot of vegan food, more so then me, and whilst he'll happily eat beef casserole, for example, he does say he'll go full vegan once he leaves home. I'm not stopping him now...

Ich habe mich nicht gegen das Virus impfen lassen.
Aber für die Stärkung meines Immunsystems habe ich immer etwas getan.

Thanks. We tend to avoid vegetarian food, mainly because many are heavy on cheese for protein and we're both lactose intolerant; my son worse than me. We've tried a few vegan cheeses, we don't like them.
