Vietnam 2016 / Bac Ha

Mia (Vietnamese) / sugar cane

Harvesting takes place as soon as the leaves turn yellow and the highest sugar content in the stalks is reached, about 12 - 24 months after planting. The pith contains a very high proportion of cane sugar (sucrose) and a small proportion of fruit sugar (fructose) and dextrose (glucose).
