The bit you are able to see in the background is Conygar Tower, known as Dunster Castle's lookout tower, The castle itself is behind the train around the third carriage,

I see Roger has told you it is the Conygar Tower in the background. Commissioned by Henry Lutterell and built in 1775 it is a circular red sandstone folly standing about 59 ft high. It is a Grade II listed building and there are walks up to it with fantastic views from the lookout point.
